German Sauerkraut Fermenting Crock Pot (HARSCH/GARTOPF)
When making cultured vegetables, like sauerkraut, air and bacteria can get into the top layers of the vegetables and spoil them. Harsch crocks are designed with a special grooved rim that allows fermentation gasses to escape but prevents airborne bacteria from entering. The stone weights, included, are laid on top of the vegetables where they give the correct pressure for the production of lactic acid.
Imported from Germany, each crock is hand-thrown earthenware, fired at 1200 degrees Celsius and finished with a lead free glaze. We recommend these crocks for all types of vegetables like: cabbages, cucumbers, carrots, pumpkins, beans, onions, celery, and peppers.
Each crock includes a water sealable lid and two stone weights.
