Ceramic Pickling Crocks

When making cultured vegetables, like sauerkraut, air and bacteria can get into the top layers of the vegetables and spoil them. Harsh crocks are designed with a special grooved rim that allows fermentation gasses to escape but prevent airborne bacteria from entering. Each crock is hand-thrown earthenware imported from Germany. The stone weights, included, are laid on top of the vegetables where they give the correct pressure for the production of lactic acid. We recommend these crocks for cultured vegetables, sauerkraut and pickle making. Each crock includes a water sealable lid and two stone weights.
