Sauerkraut
Unlike commercial sauerkraut, Gold Mine's Fresh Organic Sauerkraut is unpasteurized. Entirely handmade from organically grown cabbage and just 1.5% natural sea salt (most sauerkraut contains 2% to 3% salt), it is abundant in friendly, healthy, live enzymes and microorganisms that are powerful aids to digestion and assimilation. The cabbage is washed and sliced in small batches, seasoned with Celtic Sea Salt® and then packed into our “foolproof” Harsch ceramic pickle crocks. There it quietly ferments, going through an almost miraculous transformation over the next two weeks.
Cabbage leaves naturally contain all the enzymes they need to “digest” themselves. Once they are in the Harsch ceramic crocks, where outside air can’t get in to contaminate them, the friendly flora know just what to do.
Sauerkraut and other dishes made from fermented cabbage have long been a staple of many traditional diets. Fermented cabbage has been valued for providing the beneficial bacteria and enzymes vital to digestive health and a source for important vitamins and minerals.
Now, scientists are confirming that sauerkraut is indeed a nutritional powerhouse. Researchers in Finland have identified compounds in sauerkraut that may fight cancer. They found that the process of fermenting cabbage produces isothiocyanates, a class of compounds that have been identified in previous studies as potential cancer-fighting agents. “We are finding that fermented cabbage could be healthier than raw or cooked cabbage, especially for fighting cancer,” said Eeva-Liisa Ryhanen, Ph.D., research manager of MTT Agrifood Research Finland. “We are now working on ways of optimizing the fermentation process to make it even healthier so that consumers will eat more sauerkraut.” Beside anticancer compounds, the fermentation process also produces other healthy compounds not found in raw cabbage. These include organic acids such as lactic acid, which makes cabbage easier to digest.
